BANNOCK

For this assignment, I am asking that you as a family make some bannock. If you do not have a recipe, I have attached one below.

  • Yield: 1 loaf

Ingredients

  • 3 cups all-purpose flour

  • 1 teaspoon salt

  • 2 tablespoons baking powder

  • ¼ cup butter, melted

  • 1 ½ cups water

​

  • Step 1 

    Measure flour, salt, and baking powder into a large bowl. Stir to mix. Pour melted butter and water over flour mixture. Stir with fork to make a ball.

  • Step 2 

    Turn dough out on a lightly floured surface, and knead gently about 10 times. Pat into a flat circle 3/4 to 1 inch thick.

  • Step 3 

    Cook in a greased frying pan over medium heat, allowing about 15 minutes for each side. Use two lifters for easy turning. May also be baked on a greased baking sheet at 350 degrees F (175 degrees C) for 25 to 30 minutes.

NUTRITION

SALMON FRIED RICE

For this assignment, I am asking that you as a family prepare a nice meal to be shared.  If you do not have a recipe, I have attached one below.

  • Prep time: 10 minutes

  • Cook time: 15 minutes

  • Yield: Serves 4 to 6

If you don't have day old rice, you can take freshly made rice, spread it out in an even layer on a sheet pan, and put it into a 200°F (93°C) oven for 12 minutes.

INGREDIENTS

  • 3 tablespoons soy sauce

  • 1 teaspoon brown sugar

  • 1 tablespoon extra virgin olive oil

  • 2/3 cup diced red onion

  • 2/3 cup diced red bell pepper

  • 2 cloves garlic, minced

  • 1-inch piece of ginger, grated

  • 3 eggs, well beaten

  • 4 cups day old cooked white rice (from about 2 cups of raw rice)

  • 1 cup frozen peas, thawed

  • 2 cups cooked salmon in large chunks

  • 2 green onions, thinly sliced, including the greens

  • Cilantro (or parsley) for garnish

 

1 Mix brown sugar with soy sauce: Dissolve the brown sugar in the soy sauce in a small bowl. Set aside.

2 Sauté onion and and bell pepper, add garlic, ginger: Heat the olive oil in a large sauté pan or wok on medium high heat. Add the diced red onion and bell pepper and sauté until lightly browned, about 5 minutes.

Lower the heat to medium and stir in the garlic and grated ginger. Cook for a minute more.


3 Add eggs, then rice: Add the beaten eggs and stir until just cooked. Add the cooked rice, increase the heat to medium high and cook for a couple minutes more, stirring often.


4 Add peas, salmon, green onions, soy sauce mixture: Add the peas, salmon, and green onions. (Be gentle with the salmon so you don't break it up too much.) Stir in the soy sauce mixture and remove from heat.


Garnish with cilantro to serve, serve immediately.

NUTRITION

For this assignment, I am asking that you as a family make a salad of your choice.  It can be a garden salad, fruit salad, greek salad, broccoli salad, Caesar salad, etc.   If you do not have a recipe, I have attached one below with along with a video.

Ingredients

  • 10 to 12 strips of bacon

  • 2 broccoli crowns (5 to 6 cups florets)

  • 1 medium red onion (chopped)

  • 1/2 cup raisins.                      

  • For the Dressing:

  • 1 cup mayonnaise

  • 2 tablespoons balsamic vinegar

  • 2 teaspoons sugar

1. Gather the ingredients. 

2. Bake or fry the bacon until somewhat crisp.

3. Drain on paper towels and then dice or crumble.

4. Separate the broccoli crowns into small florets and put in a large bowl.

5. Add the chopped red onion, raisins, and bacon to the broccoli and toss to mix.

6. Combine the mayonnaise, vinegar, and sugar in a small bowl.

7.Add to the broccoli mixture. Toss to coat the broccoli with the dressing.

8. Refrigerate for at least an hour before serving.

9. Serve and enjoy!

For this assignment, I am asking that you as a family bake cookies using your favorite recipe. If you do not have a recipe, I have attached one below with along with a video.

Ingredients

Original recipe yields 36 servings

  • 2 cups peanut butter

  • 2 cups white sugar

  • 2 eggs

  • 2 teaspoons baking soda

  • 1 pinch salt

  • 1 teaspoon vanilla extract

Directions

  • Step 1 Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.

  • Step 2 In a medium bowl, stir peanut butter and sugar together until smooth. Beat in the eggs, one at a time, then stir in the baking soda, salt, and vanilla. Roll dough into 1 inch balls and place them 2 inches apart onto the prepared cookie sheets. Press a criss-cross into the top using the back of a fork.

  • Step 3 Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
